I'm contemplating using a plug device as a backup server eg 2x usb external drives which will be swapped every day.
Are these devices suitable for this. Once I have the NFS or SMB shares setup, that will be it and there will be no more user intervention apart from the drives being swapped.
Can USB drives be auto-mounted on these devices?
Which device is the best one for just a backup purpose?

That depends on many factors (which are not in your post), can they be set up to play this role ? Yes.
Are they suitable for Enterprise use ? No.

You will need to arrange that the drives are unmounted before disconnecting\powering down.

Yes (software dependant).

As you will no doubt be using a powered USB Hub, even the single USB port plugs may be used.
