email tutorial anyone?

I intend to set up an email server on an eSata plug for both internal and external email use. I would like to be able to have a webmail type wiewer to the mail server.

I have to admit googling existing mail server setups, I'm confused. There seem to be too many options. So far I have installed Dovecot and Postfix and tried some configurations (which has actually sent a dummy mail or two). However it is plain that a clear, concise guide is needed by me. Does anyone know of a site (or book -which can be an excuse to go to a London bookshop - I don't do e-books yet) which can spell out requirements, configurations and application of a debian based email server.

Hopefully soon I shall be changing ISP so it would be good to get a e-mail server ready in time for the new domain I want.
